6 medium russet potatoes, peeled and diced

1 large onion, finely chopped

4 cloves of garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

1/2 cup sour cream

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 cup shredded cheddar cheese, plus more for garnish

1/2 cup cooked and crumbled bacon, for garnish

1/4 cup chopped green onions, for garnish

Prep the Potatoes: Begin by peeling and dicing the russet potatoes into small cubes, approximately 1-inch in size to ensure even cooking.

    Combine in Slow Cooker: Place the diced potatoes, chopped onion, and minced garlic into the slow cooker.

      Add Liquid and Spices: Pour in the chicken or vegetable broth, and season the mixture with salt, black pepper, smoked paprika, and dried thyme. Stir well to combine all ingredients.

        Cook Low and Slow: Cover the slow cooker with the lid, and set it to low heat. Allow the soup to cook for 6 to 7 hours, or on high heat for 4 hours, until the potatoes are tender.
