Slow Cooker Summer Chili

1 lb ground turkey or beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

2 cups fresh corn (or one can, drained)

1 medium onion, diced

3 cloves garlic, minced

2 bell peppers, diced (red and green for color)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

1 cup chicken or vegetable broth

Optional toppings: avocado, cilantro, shredded cheese, sour cream, or lime wedges

Instructions
 

Prep the Ingredients: Begin by preparing your vegetables. Dice the onion and bell peppers, and mince the garlic.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Add the diced onion and bell peppers. Sauté for about 5 minutes until softened, then add minced garlic and cook for another minute until fragrant.

      Brown the Meat: Push the vegetables to one side of the skillet. Add the ground turkey or beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks. Season with salt, pepper, chili powder, cumin, smoked paprika, and oregano.

        Combine in Slow Cooker: Transfer the cooked meat and vegetable mixture to a slow cooker. Add the black beans, kidney beans, diced tomatoes with juices, tomato sauce, corn, and chicken broth. Stir well to combine all ingredients.

          Cook: Cover the slow cooker and set it to low heat for 6-8 hours or high heat for 3-4 hours. Stir occasionally if possible, but not necessary.

            Adjust Seasoning: About 30 minutes before serving, taste the chili and adjust seasoning if necessary. You can add more salt, pepper, or spices according to your preference.
