Ingredients

1/2 cup all-purpose flour

1/4 cup granulated sugar

1/4 teaspoon baking powder

1/8 teaspoon baking soda

1/8 teaspoon salt

1/4 cup unsalted butter, softened

1/2 large egg (beat the egg and use half, or use a small egg if available)

1 teaspoon pure vanilla extract

2 tablespoons milk

Optional: Sprinkles for topping

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with cupcake liners.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Cream Butter: In another bowl, cream the softened butter until light and fluffy. This should take about 2-3 minutes.

Combine Wet Ingredients: Add the beaten egg (or half an egg), vanilla extract, and milk to the creamed butter. Beat together until smooth and well blended.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are completely fine.

Fill Cupcake Liners: Using a small cookie scoop or spoon, fill each cupcake liner about 2/3 full with batter.

Bake: Place the cupcake tin in the preheated oven and bake for 12-15 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Cool: Once baked, remove from the oven and let cool in the tin for about 5 minutes. Then transfer the cupcakes to a wire rack to cool completely.

Decorate (optional): Once cooled, feel free to frost them with your favorite vanilla buttercream or simply dust them with powdered sugar. Add some fun sprinkles on top for a festive touch!
