Smoked Salmon Carbonara

8 ounces spaghetti or fettuccine

4 ounces smoked salmon, roughly chopped

2 large eggs

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon fresh dill, chopped (optional)

Salt and freshly ground black pepper, to taste

Zest of 1 lemon

Lemon wedges, for serving

Fresh parsley, chopped, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Prepare the Sauce: In a mixing bowl, whisk together the eggs, heavy cream, and grated Parmesan cheese until smooth. Season with salt, black pepper, and lemon zest. Set aside.

      Sauté the Garlic: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic. Lower the heat to medium-low. Quickly pour the egg mixture over the pasta, using tongs to toss everything together. The heat from the pasta will gently cook the eggs and create a creamy sauce. If the sauce is too thick, add some of the reserved pasta water a little at a time until you reach the desired consistency.

          Add Smoked Salmon: Gently fold in the chopped smoked salmon and dill (if using), allowing it to warm through.
