1 ½ pounds Brussels sprouts, trimmed and halved

6 slices thick-cut bacon, chopped

¼ cup pure maple syrup

2 tablespoons olive oil

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon black pepper

Salt, to taste

¼ cup chopped pecans (optional)

Fresh parsley, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Prepare the Brussels Sprouts: In a large bowl, combine the halved Brussels sprouts with the olive oil, smoked paprika, garlic powder, black pepper, and a pinch of salt. Toss well to evenly coat the sprouts.

      Add Bacon: Scatter the chopped bacon over the Brussels sprouts and gently mix to combine.

        Roasting: Transfer the mixture onto the prepared baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, turning halfway through until the Brussels sprouts are tender and caramelized, and the bacon is crispy.

          Drizzle Maple Syrup: When the Brussels sprouts and bacon are done roasting, remove them from the oven and drizzle the maple syrup over the top. Toss gently to combine and return to the oven for an additional 5 minutes to let the syrup glaze the sprouts.

            Add Pecans: If using, sprinkle chopped pecans over the Brussels sprouts during the last 2 minutes of roasting to toast them lightly.
