Ingredients

4 medium russet potatoes

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, finely chopped (for garnish)

Optional: Dipping sauce of your choice (e.g., garlic aioli, ranch)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

Prepare Potatoes: Wash the russet potatoes thoroughly and scrub off any dirt, as you’ll want to leave the skin on for texture and flavor. Cut each potato in half lengthwise, then cut each half into wedges (about 8 wedges per potato).

Seasoning Mix: In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well to create a smooth seasoning paste.

Coat the Wedges: Add the potato wedges to the bowl, and toss them in the seasoned oil until they are evenly coated. Ensure every wedge is well-covered for maximum flavor.

Arrange on Baking Sheet: Spread the coated wedges in a single layer on the prepared baking sheet, making sure there is space between each wedge for even cooking. Overlapping the wedges will make them soggy.

Bake: Place the baking sheet in the preheated oven and bake for 30-35 minutes or until the wedges are golden brown and crispy, flipping them halfway through to ensure they cook evenly and develop a nice crust.

Garnish and Serve: Once the wedges are done, remove them from the oven. Let them cool for a couple of minutes, then garnish with fresh chopped parsley. Serve hot with your favorite dipping sauce.
