12 oz spaghetti

1 whole head of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

1/4 cup fresh parsley, finely chopped

Grated Parmesan cheese, for serving

Zest of 1 lemon (for garnish)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle with a bit of olive oil, wrap in aluminum foil, and roast for 30-35 minutes, or until the cloves are soft and caramelized. Let cool slightly, then squeeze the roasted garlic cloves out of their skins into a bowl.

        Cook the Spaghetti:

          - Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the spaghetti and set aside.

            Make the Garlic Butter:

              - In a large skillet over medium heat, add the butter and olive oil. Once the butter has melted, add the roasted garlic cloves, red pepper flakes (if using), salt, and black pepper. Stir well and sauté for about 2-3 minutes, allowing the flavors to meld.
