Ingredients

1 pound fresh figs, stems removed and chopped

½ cup granulated sugar

2 tablespoons lemon juice

1 teaspoon grated fresh ginger (optional, for zest)

1 pinch of salt

Instructions

Prepare the Figs: In a medium-sized bowl, wash the fresh figs thoroughly. Remove the stems and chop them into quarters.

Combine Ingredients: In a large saucepan, combine the chopped figs, granulated sugar, lemon juice, fresh ginger (if using), and a pinch of salt. Stir well to ensure the sugar is evenly distributed.

Cook the Mixture: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. Allow it to cook for about 10-15 minutes, or until the figs break down and the mixture thickens to your desired consistency.

Blend (Optional): If you prefer a smoother texture, you can use an immersion blender to puree the jam to your liking. Be cautious as the mixture will be hot.

Cool and Store: Once the jam has reached your preferred consistency, remove it from the heat and let it cool for a few minutes. Transfer the jam to sterilized jars and let it cool completely before sealing. Store in the refrigerator for up to 2 weeks.
