2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 teaspoon salt

2 large eggs

1 cup buttermilk (or milk mixed with 1 tablespoon vinegar)

1/2 cup vegetable oil

1 teaspoon vanilla extract

2 medium apples, peeled and finely chopped (about 2 cups)

1/2 cup chopped walnuts or pecans (optional)

Extra cinnamon sugar for sprinkling (1 tablespoon sugar mixed with 1/2 teaspoon cinnamon)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the eggs and then add the buttermilk, vegetable oil, and vanilla extract. Whisk until smooth and fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula, being careful not to overmix. It’s okay if there are a few lumps in the batter.

          Add Apples and Nuts: Gently fold in the chopped apples and nuts (if using) until they are evenly distributed throughout the batter.
