1 can (15 oz) chickpeas, drained and rinsed

1 can (14 oz) coconut milk

1 medium onion, chopped

2 cloves garlic, minced

1-inch piece fresh ginger, grated

2 carrots, diced

1 bell pepper (red or yellow), diced

1 can (14 oz) diced tomatoes

2 tablespoons olive oil

2 teaspoons curry powder

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon turmeric

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and black pepper to taste

Fresh cilantro or parsley for garnish

Lemon wedges (for serving)

Instructions
 

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and grated ginger, sautéing for about 5 minutes until the onions are soft and translucent.

    Add Vegetables: Stir in the diced carrots and bell pepper, cooking for an additional 3-4 minutes until slightly softened.

      Spices and Pumpkin: Add the curry powder, cumin, coriander, turmeric, red pepper flakes, and a pinch of salt and black pepper. Mix well and cook for another minute until fragrant.

        Incorporate Pumpkin: Add the diced pumpkin to the pot, stirring to coat with the spices. Cook for about 5 minutes to allow the pumpkin to soften slightly.

          Combine Other Ingredients: Pour in the chickpeas, canned diced tomatoes (with juices), and coconut milk. Stir everything together and bring to a gentle simmer.
