1 cup corn kernels (fresh or frozen)

1 medium zucchini, diced

1 red bell pepper, diced

1 small red onion, diced

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

8 small corn or flour tortillas

½ cup fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

½ cup avocado or guacamole (optional)

¼ cup crumbled feta cheese (optional)

Instructions
 

Preheat the Grill: If using a gas grill, preheat it to medium-high heat. If using a grill pan, place it over medium-high heat on the stove.

    Prepare the Veggies: In a large mixing bowl, combine the corn, zucchini, red bell pepper, red onion, and cherry tomatoes. Drizzle with olive oil, then add smoked paprika, cumin, chili powder, cayenne, salt, and pepper. Toss everything together until the veggies are evenly coated with the seasoning.
