Ingredients

4 cups fresh peaches, peeled and sliced

1/2 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lime juice

Zest of 1 lime

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon unsalted butter, cut into small pieces

1 cup all-purpose flour

1/2 cup brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup buttermilk

1/4 cup vegetable oil

Optional: Vanilla ice cream for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, lime juice, lime zest, cayenne pepper, cinnamon, and nutmeg. Stir well to ensure the peaches are evenly coated and let sit for about 10 minutes to release juices.

Prepare the Baking Dish: Pour the peach mixture into a greased 9x13 inch baking dish. Dot the top with small pieces of butter.

Make the Cobbler Topping: In another bowl, mix together the flour, brown sugar, baking powder, baking soda, and salt. Pour in the buttermilk and vegetable oil, and stir until just combined, being careful not to overmix. The batter will be thick.

Assemble the Cobbler: Spoon dollops of the cobbler batter over the peach filling, ensuring some of the filling is still visible. This will create a lovely, rustic top once baked.

Bake the Cobbler: Place in the preheated oven and bake for about 35-45 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.

Cool and Serve: Allow the cobbler to cool for at least 10 minutes before serving. Serve warm with a scoop of vanilla ice cream if desired.
