1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust to taste)

½ teaspoon garlic powder

1 head of butter or romaine lettuce, leaves separated and washed

½ cup diced cucumber

½ cup diced tomatoes

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

¼ cup avocado, diced

2 tablespoons tahini or yogurt-based dressing (for drizzling)

Juice of 1 lime

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a mixing bowl, toss the drained chickpeas with olive oil, smoked paprika, ground cumin, cayenne pepper, garlic powder, salt, and black pepper until well coated.
