Ingredients

For the Salmon:

2 salmon fillets (6 oz each)

3 tablespoons honey

2 tablespoons soy sauce

1 tablespoon sriracha (adjust to taste)

1 tablespoon olive oil

1 garlic clove, minced

Salt and pepper to taste

For the Salad:

4 cups mixed salad greens (arugula, spinach, and romaine)

1 medium cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 avocado, cubed

1/4 cup crumbled feta cheese (optional)

1/4 cup roasted almonds or walnuts (for crunch)

For the Dressing:

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon fresh lemon juice

1 teaspoon honey

Salt and pepper to taste

Instructions

Prepare the Salmon:

In a small mixing bowl, whisk together honey, soy sauce, sriracha, olive oil, minced garlic, salt, and pepper. Place the salmon fillets in a shallow dish or a zip-lock bag and pour the marinade over them. Allow the salmon to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

      Cook the Salmon:

Preheat your grill or a non-stick skillet over medium-high heat. Remove the salmon from the marinade, reserving the leftover marinade. Cook the salmon for about 4-5 minutes per side, or until it's cooked through and flakes easily with a fork. During the last minute of cooking, brush the leftover marinade over the salmon for extra glaze.

          Prepare the Salad:

While the salmon is cooking, prepare the salad. In a large bowl, combine mixed greens, diced cucumber, cherry tomatoes, red onion, avocado, and feta cheese (if using). Toss the ingredients gently to combine.

              Make the Dressing:

In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, honey, salt, and pepper. Adjust seasoning according to your taste.

                  Assemble the Salad:

Once the salmon is cooked, let it rest for a few minutes before flaking it into large pieces over the salad. Drizzle the dressing over the salad and toss gently to combine. Top with roasted almonds or walnuts for added crunch.

                      Serve:

Divide the salad into bowls or plates. Garnish with fresh herbs if desired, and enjoy your Spicy Honey Glazed Salmon Salad!
