Spicy Jalapeño Ranch Chicken

4 boneless, skinless chicken breasts

1 cup buttermilk

1 packet ranch seasoning mix

3 fresh jalapeños, finely chopped (remove seeds for less heat)

1 cup panko breadcrumbs

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

Olive oil spray or cooking oil

Instructions
 

In a large bowl, mix the buttermilk and ranch seasoning mix together until well combined. Add the chopped jalapeños, then add the chicken breasts, ensuring they are completely submerged. Cover and refrigerate for at least 1 hour or overnight for best flavor absorption.

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      In another bowl, combine the panko breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and a pinch of salt and pepper.

        Remove the marinated chicken from the refrigerator. Shake off excess marinade and coat each breast thoroughly in the breadcrumb mixture, pressing firmly to ensure the coating sticks well.
