1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust based on heat preference)

½ teaspoon garlic powder

½ teaspoon salt

Freshly cracked black pepper, to taste

4 large whole wheat or spinach tortillas

1 cup fresh spinach leaves

1 avocado, sliced

1 medium tomato, diced

¼ cup plain Greek yogurt or dairy-free alternative

Juice of 1 lime

Optional toppings: sliced jalapeños, fresh cilantro, or feta cheese

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season Chickpeas: In a mixing bowl, combine drained chickpeas, olive oil, smoked paprika, cumin, cayenne pepper, garlic powder, salt, and black pepper. Toss until the chickpeas are fully coated with the spice mixture.

      Roast Chickpeas: Spread the seasoned chickpeas onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until they are golden and crispy.

        Prepare Wrap Ingredients: While the chickpeas are roasting, prepare the wrap ingredients. In a small bowl, mix the Greek yogurt with lime juice and a pinch of salt. Set aside.

          Assemble the Wraps: Once the chickpeas are done, let them cool for a few minutes. Lay out the tortillas and spread an even layer of the lime yogurt sauce on each.

            Layer the Fillings: On each tortilla, add a handful of fresh spinach, followed by the roasted chickpeas, avocado slices, diced tomatoes, and any additional toppings you desire (like jalapeños or cilantro).
