1 large zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 red onion, diced

1 cup cauliflower florets

1 cup corn kernels (fresh or frozen)

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

8 small corn or flour tortillas

1 ripe avocado, sliced

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Optional: crumbled feta or queso fresco for topping

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare Veggies: In a large mixing bowl, combine diced zucchini, red and yellow bell peppers, red onion, cauliflower florets, and corn.

      Season the Veggies: Drizzle the olive oil over the vegetables, and sprinkle with smoked paprika, chili powder, cayenne pepper, salt, and black pepper. Toss the veggies until evenly coated with the oil and spices.
