Spicy Shrimp Tacos with Mango Salsa

For the Spicy Shrimp:

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeds removed and finely diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

For the Tacos:

8 small corn or flour tortillas

1 avocado, sliced

Fresh lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a bowl, combine the shrimp, olive oil, smoked paprika, chili powder, cayenne pepper, garlic powder, onion powder, lime juice, salt, and pepper. Mix well and let it marinate for at least 20 minutes.

    Prepare the Mango Salsa: In a separate bowl, mix together the diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Allow it to sit for about 10-15 minutes so the flavors can meld.

      Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp are opaque and cooked through. Remove from heat.

        Warm the Tortillas: In another pan, lightly warm the tortillas over medium heat for about 30 seconds on each side until pliable.

          Assemble the Tacos: On each tortilla, add a few pieces of spicy shrimp, top with mango salsa, and finish with avocado slices.

            Serve: Squeeze fresh lime juice over the top, and serve immediately with extra lime wedges on the side.
