Spicy Sriracha Turkey Meatball Pitas

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh cilantro (or parsley)

2-3 cloves garlic, minced

1 large egg

2-3 tbsp Sriracha sauce (adjust for spice preference)

1 tsp salt

1/2 tsp black pepper

1 tsp smoked paprika

1/2 tsp ground cumin

For the Sauce:

1/4 cup Greek yogurt

2 tbsp mayonnaise

1-2 tbsp Sriracha sauce

1 tbsp lime juice

Pinch of salt

For Assembly:

4 whole wheat pitas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sliced cucumber

Fresh cilantro for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Make Meatball Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped cilantro, minced garlic, egg, Sriracha sauce, salt, black pepper, smoked paprika, and ground cumin. Mix until just combined. Avoid overmixing for tender meatballs.

      Form Meatballs: Using your hands, form the mixture into small meatballs, about 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them evenly.

        Bake Meatballs: Bake the meatballs in the preheated oven for about 18-20 minutes or until they are cooked through and golden brown. You can check doneness by ensuring they reach an internal temperature of 165°F (74°C).

          Prepare the Sauce: While the meatballs are baking, whisk together the Greek yogurt, mayonnaise, Sriracha sauce, lime juice, and salt in a small bowl. Adjust the Sriracha to your desired spice level.

            Warm Pitas: In the last few minutes of baking, warm the whole wheat pitas in the oven for about 3-5 minutes, or you can lightly toast them on a skillet over medium heat.
