Spicy Tahini Chickpea Lettuce Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon maple syrup or honey

1 tablespoon sriracha or your favorite hot sauce

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon lemon juice

1/2 teaspoon ground cumin

Salt and pepper to taste

8-10 large lettuce leaves (butter or romaine work well)

1/2 cup shredded carrots

1/2 cup diced cucumber

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

Sesame seeds for garnish (optional)

Instructions
 

In a mixing bowl, add the drained and rinsed chickpeas. Use a fork or potato masher to lightly mash them, leaving some whole for texture.

    In a separate bowl, whisk together tahini, soy sauce, maple syrup, sriracha, minced garlic, grated ginger, lemon juice, ground cumin, salt, and pepper until smooth and well combined.

      Pour the spicy tahini sauce over the mashed chickpeas and mix until all the chickpeas are well coated with the sauce.

        Prepare the lettuce wraps by washing the lettuce leaves and gently patting them dry.

          To assemble each wrap, place a generous spoonful of the spicy chickpea mixture onto a lettuce leaf. Top with shredded carrots, diced cucumber, and a sprinkle of chopped cilantro and green onions.

            Sprinkle sesame seeds on top for added crunch, if desired, and fold the edges of the lettuce over the filling to create your wrap.

              Serve immediately, or chill in the refrigerator for up to 30 minutes for a refreshing option.
