Spicy Thai Peanut Noodle Bowls

For the Noodles:

8 oz. rice noodles (or your preferred noodle)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, grated

1 cup bell peppers, julienned (red, yellow, or green)

1 cup shredded carrots

1 cup snap peas

2 green onions, chopped

1/4 cup fresh cilantro, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

For the Spicy Peanut Sauce:

1/3 cup peanut butter (creamy or crunchy)

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon sriracha or more to taste

1 teaspoon sesame oil

1 tablespoon lime juice

1-2 tablespoons warm water (to thin the sauce)

Instructions
 

Prepare the Noodles:

    - Cook the rice noodles according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.

      Make the Spicy Peanut Sauce:

        - In a bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sriracha, sesame oil, lime juice, and warm water until smooth. Adjust the thickness by adding more water if necessary. Taste and adjust the spice level.

          Sauté the Vegetables:

            - In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

              - Add the bell peppers and carrots and stir-fry for 2-3 minutes until they begin to soften, then add the snap peas and continue to sauté for another 2 minutes until the vegetables are bright and tender-crisp.

                Combine the Ingredients:

                  - Add the cooked rice noodles to the skillet along with the spicy peanut sauce. Toss everything together to evenly coat the noodles and vegetables with the sauce. Cook for 1-2 minutes until heated through.

                    Serve:
