Spicy Watermelon Sliders

Ingredients
  

1 medium-sized watermelon

1 cup of crumbled feta cheese

1/4 cup of fresh mint leaves, chopped

1-2 jalapeños, finely diced (adjust based on spice preference)

1 tbsp olive oil

1 tbsp honey

1 tbsp balsamic glaze

Salt and pepper, to taste

Whole grain slider buns (or mini pita pockets)

Optional: Avocado slices for topping

Instructions
 

Prepare the Watermelon:

    - Slice the watermelon into 1-inch thick rounds. Using a round cookie cutter or a glass, cut out sliders from the watermelon slices. Aim for about 8 rounds for 4 sliders.

      Make the Spicy Feta Mix:

        - In a bowl, combine the crumbled feta cheese, chopped mint leaves, and diced jalapeños. Add olive oil, honey, and a pinch of salt and pepper. Mix well to create a savory-spicy filling.

          Assemble the Sliders:

            - Take one watermelon round and add a generous tablespoon of the spicy feta mixture on top. If using, add a slice of avocado for added creaminess. Place another watermelon round on top to form a ‘slider’.

              Repeat:

                - Continue to build the sliders until all watermelon rounds are used. You should have about 4 sliders total.

                  Serve with Balsamic Glaze:

                    - Drizzle a little balsamic glaze over each slider just before serving for an added touch of sweetness and acidity.
