4 cups fresh spinach, chopped

6 large eggs

1 cup milk (or dairy-free alternative)

1 cup shredded cheese (cheddar or mozzarella)

1/2 cup diced onion

1/2 cup diced bell pepper (any color)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon olive oil

Optional: Fresh herbs (like parsley or basil) for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 5 minutes, until the onions are translucent and the bell peppers are softened. Add the chopped spinach and continue to cook, stirring occasionally, until the spinach is wilted (about 2-3 minutes). Remove from heat and set aside.

      Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and paprika until well combined.

        Combine Ingredients: Add the sautéed vegetables to the egg mixture, along with the shredded cheese. Stir gently until everything is evenly mixed.

          Bake: Pour the mixture into a greased 9x13-inch baking dish, spreading it out to ensure even cooking. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is lightly golden.
