Spinach and Feta Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup feta cheese, crumbled

1 cup mozzarella cheese, shredded (plus extra for topping)

1 egg, lightly beaten

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

Salt and pepper to taste

2 cups marinara sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo shells according to the package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a large bowl, combine chopped spinach, ricotta cheese, feta cheese, 1 cup of mozzarella cheese, beaten egg, Parmesan cheese, minced garlic, oregano, basil, salt, and pepper. Mix until well combined.

        Stuff the Shells: Using a spoon or a piping bag, generously fill each cooked shell with the spinach and cheese mixture.

          Prepare the Baking Dish: Spread half of the marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce, seam side up.

            Add Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, making sure they are covered. Sprinkle additional mozzarella on top for a cheesy finish.

              Bake: Cover the baking dish loosely with aluminum foil (to prevent direct contact with the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let rest for a few minutes. Garnish with chopped parsley before serving.
