1 sheet of puff pastry (thawed)

2 cups fresh spinach (washed and chopped)

1 cup fresh mozzarella cheese (cubed)

¼ cup ricotta cheese

1 small garlic clove (minced)

1 tablespoon olive oil

½ teaspoon salt

¼ teaspoon black pepper

1 egg (beaten, for egg wash)

Sesame seeds (optional, for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the chopped spinach and cook for 2-3 minutes, stirring occasionally, until wilted. Remove from heat and let it cool slightly.

      Mix the Filling: In a bowl, combine the sautéed spinach with the cubed mozzarella, ricotta cheese, salt, and black pepper. Mix well until all ingredients are evenly distributed.

        Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet to smooth out creases. Cut it into 3-inch squares (you should get about 12 squares).

          Fill the Pastry: Place about 1 tablespoon of the spinach and cheese mixture in the center of each pastry square. Be careful not to overfill, as this will make sealing difficult.
