For the Sticky Garlic Soy Chicken:

1.5 lbs (680g) chicken thigh fillets, boneless and skinless

1/4 cup soy sauce

2 tbsp honey

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp red pepper flakes (adjust to taste)

2 tbsp vegetable oil (for cooking)

Green onions, sliced (for garnish)

Sesame seeds (for garnish)

For the Sesame Rice:

1 cup jasmine rice

2 cups water

2 tbsp toasted sesame oil

1 tbsp soy sauce

1 tbsp sesame seeds

1/4 cup chopped cilantro (optional, for garnish)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine soy sauce, honey, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes. Mix well.

      - Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to overnight for maximum flavor).

        Prepare the Rice:

          - In a medium saucepan, rinse the jasmine rice under cold water until the water runs clear. Drain well.

            - Add the rinsed rice and water to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.

              - Once cooked, remove from heat and let sit for 5 minutes. Fluff with a fork and mix in toasted sesame oil, soy sauce, and sesame seeds. Keep warm.

                Cook the Chicken:

                  - Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade, shaking off excess.

                    - Add the chicken thighs to the skillet and cook for 4-5 minutes on each side or until browned and cooked through.

                      - Pour the remaining marinade into the skillet and bring to a simmer. Cook for an additional 2-3 minutes, allowing the sauce to thicken and glaze the chicken.

                        Serve:

                          - To serve, slice the sticky garlic soy chicken and place it over a bed of the sesame rice. Drizzle with the thickened sauce from the skillet.

                            - Garnish with sliced green onions and sesame seeds. Sprinkle chopped cilantro, if using.
