1 cup snap peas

1 cup mushrooms, sliced

1 carrot, julienned

3 green onions, sliced

1/4 cup soy sauce

2 tablespoons oyster sauce (or hoisin for a vegetarian option)

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 teaspoon red pepper flakes (optional, for heat)

Sesame seeds for garnish

Fresh cilantro or parsley for garnish (optional)

Cook the Noodles: Begin by cooking the rice noodles according to package instructions. Drain and rinse them under cold water to prevent sticking, set aside.
