Ingredients

1 cup fresh strawberries, hulled and sliced

1/2 cup fresh mint leaves, tightly packed

1/4 cup granulated sugar

1/4 cup freshly squeezed lime juice (about 2 limes)

1 cup coconut water

1 cup Greek yogurt

1 tablespoon honey (optional)

Zest of 1 lime

Pinch of salt

Instructions

Prepare the Strawberries: Place the sliced strawberries in a mixing bowl and sprinkle with granulated sugar. Toss to coat and let them sit for about 10 minutes until they release their juices.

Create Mint Lime Mixture: In a blender or food processor, combine the fresh mint leaves, lime juice, coconut water, lime zest, and a pinch of salt. Blend until smooth and the mint is finely chopped.

Combine Ingredients: In a large mixing bowl, combine the macerated strawberries (and their juices), Greek yogurt, honey (if using), and the mint-lime mixture. Gently fold the ingredients together until well combined, but be careful not to mash the strawberries too much.

Mold the Mixture: Spoon the mixture into silicone molds or ice cube trays, filling each cavity about three-quarters full. For a tropical twist, you can add small mint leaves or additional strawberry slices on top.

Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid.

Serve: Once frozen, remove the Strawberry Mojito Melts from the molds. Allow them to sit at room temperature for about 5 minutes before serving to make them easier to remove. Enjoy them as a refreshing treat during warm weather!
