Ingredients

2 medium cucumbers

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon capers, finely chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1/2 teaspoon lemon juice

Salt and pepper, to taste

1/4 cup cherry tomatoes, diced

1/4 cup red onion, finely diced

Optional: a sprinkle of paprika or cayenne pepper for garnish

Instructions

Cucumber Prep: Wash the cucumbers thoroughly. Cut both cucumbers in half lengthwise and scoop out the seeds using a spoon to create hollow boats. Set aside.

Make the Filling: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, capers, fresh dill, lemon juice, salt, and pepper. Mix well until all ingredients are fully incorporated and the mixture is creamy.

Add Crunch and Flavor: Gently fold in the diced cherry tomatoes and red onion into the tuna mixture, adding a refreshing crunch and flavor.

Stuff the Cucumbers: Carefully spoon the tuna mixture into each cucumber half, packing it in but allowing it to slightly overflow for a beautiful presentation.

Garnish: If desired, sprinkle a pinch of paprika or cayenne pepper on top for an added kick and visual appeal.

Chill: Place the stuffed cucumbers on a serving platter and refrigerate for at least 15-20 minutes to let the flavors meld together.

Serve: Slice the cucumbers into bite-sized pieces just before serving for easy eating. Enjoy your refreshing and healthy appetizer!
