18 large cremini or portobello mushrooms

2 tablespoons olive oil

2 cloves garlic, minced

1 cup fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko for crunch)

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mushrooms: Gently clean the mushrooms with a damp paper towel to remove any dirt. Remove the stems and finely chop them, setting the caps aside.

      Sauté the Filling: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped mushroom stems. Sauté for about 3-4 minutes until the mixture is fragrant and the stems have softened.

        Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

          Make the Cream Filling: In a medium bowl, combine the sautéed mixture with the cream cheese, grated Parmesan, breadcrumbs, red pepper flakes (if using), salt, and pepper. Mix until fully combined and creamy.

            Stuff the Mushrooms: Take one mushroom cap at a time and fill each with a generous amount of the spinach-parmesan mixture, pressing down slightly to ensure it stays in place.

              Bake: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the tops are golden and bubbly.

                Garnish and Serve: Once out of the oven, let them cool slightly, then garnish with freshly chopped parsley. Serve warm as a delightful appetizer or side dish.
