Stuffed Sweet Potatoes with BBQ Chicken

4 medium sweet potatoes

2 cups cooked, shredded chicken

1 cup BBQ sauce (your favorite brand)

1 cup corn (fresh or canned)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup red onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 teaspoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for heat)

Sour cream (for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and prick them several times with a fork to allow steam to escape. Place them on a baking sheet lined with foil or parchment paper.

      Roast Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 45-60 minutes, or until they are tender and can easily be pierced with a fork. Cooking time may vary depending on the size of the potatoes.

        Prepare the BBQ Chicken Filling: In a medium-sized bowl, mix the shredded chicken with 1 cup of BBQ sauce, corn, black beans, garlic powder, smoked paprika, olive oil, salt, and pepper. Stir until well combined.
