4 large eggs

1 ripe avocado, peeled and pitted

1 tablespoon fresh lime juice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (smoked or regular)

4 whole wheat or spinach tortillas

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Egg Mixture: In a medium bowl, whisk together the eggs, salt, black pepper, and paprika until fully combined. Set aside.

    Cook the Eggs: Heat a non-stick skillet over medium heat and lightly grease with cooking spray or a teaspoon of olive oil. Pour in the egg mixture and scramble gently until just cooked, about 4–5 minutes. Remove from heat and set aside.

      Prepare the Avocado Spread: In a separate bowl, mash the avocado with a fork. Add lime juice, and a pinch of salt and mix well to create a creamy spread.

        Assemble the Wrap: Lay a tortilla flat on a clean surface. Spread about 2 tablespoons of the mashed avocado mixture onto the center of the tortilla. Top with a handful of fresh spinach leaves, a quarter of the scrambled eggs, halved cherry tomatoes, and a sprinkle of feta cheese if desired.

          Wrap it Up: Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to form a wrap. Repeat the process for the remaining tortillas.
