8 rice paper wrappers

1 cup cucumber, julienned

1 cup bell pepper (red, yellow, or orange), thinly sliced

1 cup carrots, grated

1 cup red cabbage, finely shredded

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

1/2 cup cream cheese, softened (or a vegan alternative)

Zest of 1 lime

Juice of 1 lime

Salt and pepper, to taste

1/4 cup sesame seeds (optional, for garnish)

Instructions
 

Prepare the Filling: In a mixing bowl, combine the cucumber, bell pepper, carrots, red cabbage, mint, cilantro, avocado, cream cheese, lime zest, lime juice, salt, and pepper. Mix well until all ingredients are evenly combined.

    Soften the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, until it becomes pliable but not too soft. Lay it flat on a clean surface.

      Assemble the Rolls: Place about 2-3 tablespoons of the veggie filling in the center of the softened rice paper, making sure to leave some space at the edges. Carefully fold the sides of the wrapper over the filling, then roll it up tightly from the bottom upwards, like a burrito. Repeat the process with the remaining wrappers and filling.

        Serve: Arrange the rolls on a serving platter. If desired, sprinkle sesame seeds over the top for added crunch.

          Optional Dipping Sauce: For an extra burst of flavor, whip up a quick dipping sauce by mixing soy sauce, a dash of sesame oil, and a squeeze of fresh lime juice.

            Enjoy: Serve immediately, or refrigerate for up to 2 hours before serving.
