Sweet and Sour Tofu Stir Fry

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

1 bell pepper (any color), sliced

1 cup sugar snap peas, trimmed

1 cup pineapple chunks (canned or fresh)

½ cup red onion, sliced

2 cloves garlic, minced

1-inch piece ginger, grated

¼ cup soy sauce

¼ cup cider vinegar

2 tablespoons brown sugar

1 tablespoon ketchup

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds and green onions for garnish

Prepare the Tofu: Start by pressing the tofu for at least 15 minutes to remove excess moisture. After pressing, cut the tofu into bite-sized cubes. In a medium bowl, toss the tofu cubes with cornstarch until evenly coated.

    Fry the Tofu: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and fry until golden brown and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Toss in the red onion and sauté for 2-3 minutes until it starts to soften. Add the bell pepper, sugar snap peas, garlic, and ginger. Stir-fry for another 4-5 minutes until the vegetables are crisp-tender.

        Make the Sweet and Sour Sauce: In a small bowl, whisk together the soy sauce, cider vinegar, brown sugar, ketchup, and sesame oil until well combined.

          Combine Everything: Return the crispy tofu to the skillet with the sautéed vegetables. Pour the sweet and sour sauce over the mix. Stir gently to combine, cooking for an additional 2-3 minutes to heat everything through and allow the flavors to meld.

            Season and Serve: Taste and adjust seasoning with salt and pepper if needed. Once well combined, remove from heat, and serve immediately. Garnish with sesame seeds and chopped green onions on top.
