Sweet and Spicy Pineapple Chicken

1 pound boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup bell pepper (red or yellow), sliced

1/2 cup onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium preferred)

1/4 cup honey

2 tablespoons sriracha sauce (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil (for cooking)

Salt and pepper to taste

Green onions and sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, honey, sriracha, rice vinegar, garlic, and ginger. Add the chicken thighs, making sure they are well coated. Allow to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

    Prepare the Vegetables: While the chicken marinates, slice the bell pepper and onion. Set aside.

      Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and season with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and let rest.

        Stir-Fry the Vegetables: In the same skillet, add the sliced onion and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are slightly softened.

          Add Pineapple and Sauce: Add the pineapple chunks to the skillet followed by the reserved marinade. Bring to a simmer and add the cornstarch slurry to thicken the sauce. Stir well, allowing the sauce to bubble for 2-3 minutes until thickened.

            Combine and Serve: Slice the cooked chicken and return it to the skillet with the pineapple sauce and veggies. Toss everything together to coat the chicken.

              Garnish: Remove from heat. Serve the Sweet and Spicy Pineapple Chicken over rice or noodles, garnished with chopped green onions and sesame seeds.
