1.5 lbs boneless, skinless chicken thighs

1/2 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame oil

1/2 teaspoon salt

1/4 teaspoon black pepper

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large mixing bowl, combine the sweet chili sauce, soy sauce, rice vinegar, honey, minced garlic, minced ginger, sesame oil, salt, and black pepper. Add the chicken thighs, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes (up to 2 hours for deeper flavor).

    Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).

      Cook the Chicken:

        - Grilling: Remove the chicken from the marinade and place it onto the grill. Grill for about 5-7 minutes per side, or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/74°C).

          - Baking: Place the marinated chicken on a lined baking sheet. Bake in the preheated oven for 20-25 minutes, flipping halfway through, or until cooked through.

            Prepare the Sauce: While the chicken cooks, pour the leftover marinade into a small saucepan. Bring it to a boil over medium heat and let it simmer for about 5 minutes until it thickens slightly.

              Serve: Once the chicken is done, remove it from the heat and let it rest for 5 minutes. Slice the chicken and drizzle the thickened sauce over the top. Garnish with chopped green onions and sesame seeds.
