Sweet Chili Mango Chicken Bites

1 lb (450g) boneless chicken breasts, cut into bite-sized pieces

1 ripe mango, peeled and diced

1/4 cup sweet chili sauce

1 tbsp soy sauce

1 tbsp lime juice

2 cloves garlic, minced

1 tsp ginger, grated

2 tbsp olive oil

1/4 tsp black pepper

1/4 tsp salt

1/4 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Marinate the Chicken: In a mixing bowl, combine the sweet chili sauce, soy sauce, lime juice, garlic, ginger, black pepper, and salt. Add the chicken pieces to the marinade, ensuring they are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken pieces (reserve the marinade for later). Cook the chicken for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.

      Add Mango and Sauce: Lower the heat to medium and add the diced mango to the skillet. Pour in the reserved marinade and stir well to combine. Continue to cook for another 2-3 minutes, allowing the sauce to reduce slightly and coat the chicken and mango.

        Thicken the Sauce (Optional): If you prefer a thicker sauce, you can mix 1 tsp of cornstarch with a tablespoon of water to create a slurry. Stir it into the skillet and cook for an additional minute until the sauce thickens.
