Sweet Corn & Bacon Queso Dip

4 slices of bacon, chopped

1 cup fresh sweet corn (or frozen corn, thawed)

1 small onion, finely chopped

2 garlic cloves, minced

1 jalapeño, seeded and finely diced (optional, for heat)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

½ cup milk (whole or 2%)

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips or fresh veggies (for serving)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Once done, remove the bacon with a slotted spoon and let it drain on paper towels, leaving the bacon grease in the skillet.

    Sauté Vegetables: In the same skillet with the bacon grease, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and jalapeño (if using) and sauté for another minute until fragrant.

      Incorporate the Corn: Stir in the sweet corn and cook for 2-3 minutes until heated through. This adds a nice sweetness and crunch to the dip.

        Add the Cheeses: Lower the heat to medium-low. Add the softened cream cheese to the skillet; stir until melted and combined with the veggies. Gradually add the shredded cheddar and Monterey Jack cheese, stirring continuously until everything is melted and smooth.

          Adjust Consistency: Pour in the milk slowly while stirring until you reach your desired dip consistency. If you like it thicker, add less milk.

            Season: Stir in the smoked paprika, cumin, and season with salt and pepper to taste. Mix in the crispy bacon bits, reserving a few for garnish.
