1 cup fresh corn kernels (about 2 ears of corn)

1/2 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1 large egg, lightly beaten

1/2 cup buttermilk (or milk)

Oil for frying (vegetable or canola)

Lime wedges, for serving (optional)

Instructions
 

Prep the Corn: If using fresh corn, shuck the ears and cut kernels off the cob. You should have about a cup of kernels. If using frozen corn, make sure it's thawed and drained.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, cornmeal, baking powder, baking soda, salt, black pepper, and smoked paprika. Whisk until everything is evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the beaten egg and buttermilk until uniform in consistency.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Corn and Vegetables: Fold in the fresh corn kernels, chopped green onions, and diced red bell pepper until evenly distributed throughout the batter.

            Heat the Oil: In a large skillet or frying pan, pour enough oil to cover the bottom (about 1/4 inch deep) over medium heat. You’ll want the oil hot enough that a drop of batter sizzles when added.

              Fry the Fritters: Once the oil is hot, drop spoonfuls (about 2 tablespoons each) of the fritter batter into the pan, making sure not to overcrowd. Fry for 3-4 minutes on each side or until golden brown and crispy.

                Drain: Remove fritters from the pan and place them on a paper towel-lined plate to drain excess oil.
