Sweet Corn Fritters with Aioli

Ingredients
  

1 cup fresh or frozen sweet corn kernels

3/4 cup all-purpose flour

1 large egg

1/2 cup milk

2 green onions, finely chopped

1/4 cup grated Parmesan cheese

1 tsp baking powder

1/2 tsp smoked paprika

Salt and pepper to taste

Vegetable oil, for frying

For the Aioli:

1/2 cup mayonnaise

1 garlic clove, minced

1 tbsp lemon juice

1 tsp Dijon mustard

Salt and pepper to taste

Optional: fresh herbs (like dill or parsley) for garnish

Instructions
 

Prepare the Aioli: In a small bowl, combine mayonnaise, minced garlic, lemon juice, Dijon mustard, salt, and pepper. Stir until smooth. Taste and adjust seasoning if required. Optionally, mix in fresh herbs. Set aside in the refrigerator to allow flavors to meld.

    Prepare the Batter: In a large mixing bowl, combine the flour, baking powder, smoked paprika, and a pinch of salt and pepper. Whisk together until well combined.

      Wet Ingredients: In a separate bowl, beat the egg and mix it with milk. Pour this mixture into the dry ingredients and stir to combine.

        Add Corn and Green Onions: Fold in the sweet corn kernels and chopped green onions, making sure everything is evenly coated with the batter.

          Heat the Oil: In a large skillet, add about 1/4 inch of vegetable oil and heat over medium-high heat until hot (you can test this by dropping a small spoonful of batter into the oil; it should sizzle immediately).

            Fry the Fritters: Using a spoon or a small ice cream scoop, drop spoonfuls of the corn batter into the hot oil, making sure not to overcrowd the pan. Flatten them slightly with the back of the spoon if needed. Fry for about 3-4 minutes per side, or until they are golden brown and crispy.

              Drain Excess Oil: Using a slotted spatula, remove the fritters from the skillet and drain them on paper towels to remove excess oil.
