2 cups fresh corn kernels (or 1 can of corn, drained)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

1 tablespoon honey or maple syrup

1/2 teaspoon salt

8 small corn tortillas

1 avocado, sliced

1/2 cup crumbled feta cheese (or cotija cheese)

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: sour cream or Greek yogurt for topping

Prepare the Corn: In a large skillet over medium heat, add the olive oil. Once hot, add the fresh corn kernels and cook for about 5-7 minutes until slightly charred and tender. If using canned corn, just heat through for about 3-4 minutes.
