4 cups fresh peaches, peeled and diced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/2 teaspoon cinnamon (optional)

For the Crust and Crumble Topping:

2 cups all-purpose flour

1 cup old-fashioned rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 cup unsalted butter, melted (2 sticks)

1 teaspoon vanilla extract

Instructions
 

Prepare the Peach Filling:

    - In a mixing bowl, combine the diced peaches, granulated sugar, lemon juice, vanilla extract, cornstarch, and cinnamon (if using). Gently toss to coat the peaches well. Set aside to let the flavors meld while you prepare the crust.

      Prepare the Crust and Crumble Topping:

        - Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

          - In a large bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking powder, and salt until well combined.

            - Pour the melted butter and vanilla extract into the dry ingredients and mix until crumbly and well combined. The mixture should be moist but still crumbly.

              Assemble the Bars:

                - Press half of the oat mixture into the bottom of the prepared baking dish to create an even layer for the crust.

                  - Spread the peach filling evenly over the crust layer.

                      Bake the Bars:
