Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (you can use canned, drained)

1/2 cup bell pepper, diced (use red or yellow for a vibrant dish)

1/4 cup red onion, diced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium recommended)

1/4 cup honey

1 tablespoon rice vinegar

2 teaspoons cornstarch mixed with 2 tablespoons cold water (for thickening)

2 tablespoons sesame oil

1 tablespoon sesame seeds (optional for garnish)

Fresh cilantro or green onions for garnish

Instructions

Marinate the Chicken: In a mixing bowl, combine the soy sauce, honey, rice vinegar, minced garlic, and ginger. Add the bite-sized chicken pieces and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Stir-Fry: In a large skillet or wok, heat the sesame oil over medium-high heat. Once hot, add the marinated chicken pieces (reserve the marinade) and stir-fry for 5-7 minutes until they are cooked through and golden brown.

Add Vegetables and Pineapple: Next, add the diced bell pepper, red onion, and fresh pineapple chunks to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are slightly tender.

Thicken the Sauce: Pour the reserved marinade into the skillet, followed by the cornstarch slurry (cornstarch mixed with water). Stir continuously until the sauce thickens and glazes the chicken and vegetables, about 2-3 minutes.

Serve: Remove the skillet from heat. Serve the Sweet Pineapple Chicken Bites warm over steamed rice or quinoa. Garnish with sesame seeds and fresh cilantro or sliced green onions for added flavor and presentation.
