1 cup unsweetened shredded coconut

1 cup raw pistachios (shelled)

1/2 cup pitted dates (softened)

1/4 cup maple syrup or honey

1/4 tsp salt

1/2 cup additional finely chopped pistachios (for rolling)

Prepare the Nuts: Place the raw pistachios in a food processor. Pulse them a few times until they are finely chopped, but take care not to grind them into a paste. Set aside 1/2 cup for rolling later.

    Combine Ingredients: In the same food processor, add the shredded coconut, softened dates, maple syrup (or honey), salt, vanilla extract, and cardamom (if using). Process the mixture until it forms a sticky, cohesive dough. You may scrape down the sides as necessary.
