2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 cup cooked brown rice (or quinoa for a lighter option)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and pepper, to taste

1 tablespoon olive oil

4 large whole wheat tortillas

½ cup shredded cheese (cheddar or vegan alternative)

½ avocado, sliced, for topping

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 425°F (220°C). Toss the diced sweet potatoes with 1 tablespoon of olive oil, cumin, smoked paprika, chili powder, salt, and pepper. Spread them out on a baking sheet in a single layer and roast for about 25-30 minutes, or until tender and slightly caramelized, tossing halfway through.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the red onion and bell pepper for about 5-7 minutes, until softened. Add the minced garlic and cook for another minute, until fragrant.

      Combine Ingredients: In a large mixing bowl, combine the roasted sweet potatoes, sautéed veggies, black beans, and cooked brown rice. Mix well to incorporate all the flavors. Taste and adjust seasoning if necessary.

        Assemble the Burritos: Lay out the whole wheat tortillas and place about ¾ cup of the sweet potato mixture in the center of each tortilla. Sprinkle shredded cheese on top. Fold in the sides and roll up tightly to form burritos.
