1 medium sweet potato, cooked and mashed

6 large eggs

1/2 cup shredded cheese (cheddar or feta work great)

1/2 cup diced bell peppers (any color)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray (for muffin tin)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a muffin tin with olive oil spray.

    In a large bowl, combine the cooked and mashed sweet potato with the eggs. Whisk until fully blended.

      Add the shredded cheese, diced bell peppers, chopped green onions, garlic powder, paprika, salt, and pepper to the mixture. Stir until all ingredients are well combined.

        Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

          Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden on top. A toothpick should come out clean when inserted into the center.

            Let the muffins cool in the pan for a few minutes before gently removing them and transferring to a wire rack to cool completely.

              Store the Sweet Potato Egg Muffin Snacks in an airtight container in the refrigerator for up to a week or freeze for longer storage.
