Sweet Potato Nachos

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 jalapeño, sliced (optional)

1 cup shredded cheddar cheese (or dairy-free cheese)

1/4 cup sour cream (or Greek yogurt)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into thin rounds, about 1/4 inch thick. This will help them crisp up nicely in the oven.

      Season and Coat: In a large mixing bowl, combine the sweet potato slices with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until all slices are evenly coated.

        Arrange on Baking Sheet: Spread the seasoned sweet potato slices in a single layer on a large baking sheet lined with parchment paper. Make sure the slices do not overlap to ensure even cooking.

          Bake the Sweet Potatoes: Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden and crispy at the edges.

            Build the Nachos: Once the sweet potatoes are cooked, remove them from the oven and layer them on a large oven-safe serving dish or another baking sheet. Start with a layer of sweet potato slices, followed by black beans, corn, cherry tomatoes, jalapeños, and a generous sprinkle of shredded cheese.

              Melt the Cheese: Return the nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Top and Serve: Remove from the oven and top with diced avocado, sour cream, and chopped cilantro. Serve immediately with lime wedges on the side for an extra zesty kick.
