Sweet Pumpkin Pie Oat Muffins

1 cup rolled oats

1 cup all-purpose flour (or gluten-free flour of choice)

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup canned pumpkin puree (unsweetened)

1/2 cup brown sugar, packed

1/4 cup maple syrup (or honey)

1 large egg

1/3 cup unsweetened applesauce

1 teaspoon vanilla extract

1/2 cup chopped pecans or walnuts (optional)

1/2 cup chocolate chips or raisins (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with oil or cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the rolled oats, flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the pumpkin puree, brown sugar, maple syrup, egg, applesauce, and vanilla extract until smooth.

        Combine Mixtures: Slowly fold the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix. If using, fold in the chopped nuts and chocolate chips or raisins at this stage.

          Fill Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

            Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

              Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

                Serve and Enjoy: Serve warm or at room temperature. These muffins can be stored in an airtight container for up to a week or frozen for longer storage.
