1 lb (450g) boneless chicken breasts, sliced into thin strips

1 cup fresh pineapple, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small red onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sriracha sauce (adjust to taste)

1 tablespoon cornstarch (mixed with 2 tablespoons water)

Salt and pepper to taste

1/4 cup green onions, chopped (for garnish)

Cooked jasmine rice or rice noodles (for serving)

Instructions
 

Prepare the Marinade: In a bowl, mix the soy sauce, honey, sriracha sauce, salt, and pepper. Add the sliced chicken and marinate for at least 15 minutes to absorb flavors.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Add the marinated chicken to the skillet, spreading it out in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a bit more oil if necessary. Add the sliced red onion, bell peppers, and cook for 2-3 minutes until they start to soften. Add the minced garlic and ginger, stir-frying for another minute until fragrant.

          Combine Ingredients: Return the chicken to the skillet. Add the diced pineapple and the cornstarch slurry. Stir everything together and let cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken and vegetables evenly.

            Taste and Adjust: Taste the stir fry and adjust the seasoning if necessary, adding more sriracha for heat or honey for sweetness.

              Serve: Remove from heat and garnish with chopped green onions. Serve hot over cooked jasmine rice or rice noodles for a complete meal.
