Taco Chicken Zoodle Bowls

1 lb boneless, skinless chicken breasts, diced

2 medium zucchinis, spiralized into zoodles

1 bell pepper, diced (any color)

1 small red onion, diced

2 cloves garlic, minced

1 packet (1 oz) taco seasoning

1 cup cherry tomatoes, halved

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper, to taste

Optional toppings: shredded cheese, sour cream, jalapeños

Instructions
 

Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and sprinkle with taco seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink. Remove from the skillet and set aside.

    Sauté Veggies: In the same skillet, add the remaining tablespoon of olive oil. Add the diced red onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes until the onions are translucent and the peppers are slightly tender.

      Combine Ingredients: Add the cooked chicken back to the skillet along with the cherry tomatoes, black beans, and corn. Stir to combine and heat through for another 2-3 minutes. Season with salt, pepper, and lime juice to taste.

        Prepare Zoodles: In a separate pan, add the spiralized zucchini (zoodles) and cook for 1-2 minutes over medium heat just until slightly softened. You can opt to leave them raw for added crunch if desired.

          Assemble Bowls: Layer the zoodles in serving bowls. Top with the chicken and veggie mixture. Add diced avocado, fresh cilantro, and any additional toppings of your choice such as shredded cheese or jalapeños.
